Christmas doesn’t have to be all about the turkey! Why not indulge in a delicious rich fillet with the all-time favourite festive side Cauliflower Cheese.
Ingredients:
- Whole roast fillet of beef
- 1 whole fillet USDA beef
- Half a bunch of thyme
- Quarter bunch of rosemary
- 1 whole peeled garlic
- 1 beef stock cube
- 2 spoons of Dijon mustard
- A quarter cup of mixed peppercorns
- Splash of water
Cooking Instructions:

Blend all marinating ingredients together to form a paste 100g butter
4 cloves garlic peeled
Quarter bunch of thyme
Salt and pepper to season

Remove the silver skin off your fillet and cut it in half. Season well and in a hot pan, seal until golden brown and add half butter, thyme and garlic and baste until a nice crust forms
Add to a large oven tray and repeat with the other fillet

Cover with marinade (this is not necessary however it adds extra flavour)
Cook in a preferred oven at 180 degrees for roughly 30-40 minutes.

Using a probe check the top end of your fillet until it is approximately 35 degrees, (if you leave for slightly longer your fillet tail will be considerably higher, therefore, allowing for a range of cooking levels throughout keeping all guests happy!)
Ultimate cauliflower cheese (feeds 10):
Ingredients:
- 2 whole cauliflower (cut into large pieces)
- 1L milk
- 80g flour
- 70g butter
- 10ml truffle oil
- 1 whole mozzarella cut into large pieces
- 50g grated cheddar
- 50g parmesan
- 50g applewood smoked cheese
- Sprig of thyme
- 2 garlic cloves
- 2 tbsp Dijon/English mustard
Cooking Instructions:

In a pan add 250ml milk and roughly 1L water as well as a good handful of salt and bring to the boil, cooking your cauliflower, in batches until soft
2.
In a separate pan add your milk, sprig of thyme and garlic and bring to a light simmer

Melt your butter and truffle oil in a pan and add flour, on a low heat continuously stir for roughly 5 minutes until lighter in colour
5.
Now slowly add your hot milk mixture (removing your garlic and thyme) until a thick sauce forms
6.
Add your mustard, stir in along with salt and pepper and mix in all your cheeses until melted, leaving some for topping
7.
Stir in cauliflower and add to a oven safe tray finishing with the remaining cheese and bake in a preheated oven at 200 degrees for 10-15 minutes until golden brown
Finish with more truffle oil and chives
