Easter Recipe: Butterflied Te Mana Lamb Leg Recipe

Butterflied Leg of Te Mana Lamb
  • 1 Whole Leg of Lamb
  • For The Marinade:
  • Lamb stock cube
  • 50 grams Wild garlic (Or six cloves of regular garlic if you can’t get wild garlic)
  • 0.5 Bunch of parsley
  • 2 teaspoons Cumin
  • 2 teaspoons Sumac
  • 2 teaspoons Crushed black pepper
  • 50 milligrams Olive Oil
  • 1/4 Bunch of Rosemary
  • 1/4 Bunch of thyme
  • Pinch of Dried oregano
  • Cucumber & Yoghurt Dip
  • 500 milliliters Greek yoghurt
  • 1 Cucumber (Washed)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Cracked Pepper
  • 1 teaspoon Cumin
  • 0.5 Bunch of mint chopped
  • Salsa Verde
  • 50 grams Wild garlic
  • 1/4 Bunch of parsley
  • 1/4 Bunch of basil
  • 1/4 Bunch of mint
  • 4 Cloves of garlic
  • 1 Handful of Capers
  • 1/2 Red Onion (Chopped)
  • 1 Red chilli (Finely chopped)
  • 1/4 cup Extra-virgin olive oil
  • 1/4 cup Cider Vinegar
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Gravy Granules
Instructions
    Lamb and Marinade
  1. Blend all the marinade ingredients, rub on the lamb and leave to marinate for up to 24 hours.

  2. Remove lamb from the fridge 30 minutes before cooking.

  3. To cook the lamb, seal it off well in a pan then preheat your oven to 170°.

  4. Place your lamb in the oven for approximately 40 minutes or until it probes with a centre heat of 40° degrees.

  5. Remove from the oven and rest it for about 40 minutes, reserve in the cooking juices.

  6. To serve, put your meat back in the oven for 5 to 10 minutes to heat through.

  7. Now to slice. Make sure you’re going against the grain not with it as meat will be tough

    Serve with your dips. This goes perfectly with a nice Greek salad and some fresh Jersey Royals.

    Grate your cucumber and mix everything in a bowl. Season well with salt.

  11. Salsa Verde
  12. Add your onions, garlic and chilli in a pan just covered with vinegar

  13. Add your sugar and put on the heat. Reduce the vinegar by half.

  14. Now add the resting juices from your Lamb into your pan and reduce by half 

  15. Now whilst whisking your olive oil, add your capers and let it cool

  16. Finally add your herbs that you’ve chopped to taste for seasoning then serve
