  • 0.5 cups Brown Sugar
  • 2 tablespoons Ketchup
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Worcestershire Sauce
  • 0.25 cups Chile Sauce
  • 1 Garlic Clove
  • 1 teaspoon Mustard Powder
  • 1 Dash Ground Pepper
  • 2 tablespoons Rum
  • 2 teaspoons Salt
  • 1 tablespoon Paprika
  • 0.5 teaspoons Chilli Powder
  • 0.25 teaspoons Garlic Powder
  • 1 Dash Cayenne Pepper
  1. Pat ribs dry with a paper towel and remove the silver skin from the ribs

  2. Stir together the marinade ingredients in a bowl and then place the ribs in a shallow dish. Pour ⅔ of the marinade over the ribs, making sure to turn the ribs to marinade both sides

  3. Refrigerate overnight

  4. Take the ribs out of the fridge and drain the marinade from the dish

  5. Stir together the ingredients for the spice rub and then use your hands to rub the spice mixture all over each side of the ribs. Make sure that the ribs are coated in the mixture to ensure full flavour

  6. Preheat the barbecue grill to medium heat, making sure that the grills are clean

  7. Place the ribs over the grill, and cook for around 30 minutes, being careful to turn them frequently so they are evenly cooked

  8. Brush the leftover marinade mixture over the ribs

  9. Serve with your favourite choice of barbecue sides!
