Tom Hixson Fillet Steak Diane

Steak Diane is a dish originally founded in New York during the 1930s. The sauce is made from seasoned pan juices, generally prepared in restaurants tableside and sometimes flambéed. Here you can enjoy yourself at home with a recipe by Chef Harvey Ayliffe.


  • 6-8 oz. Tom Hixson Hereford Fillet (Centre Cut)
  • Sea Salt
  • 1/2 cup beef stock
  • 2 tsp. Worcestershire sauce
  • 2 tsp. Dijon mustard
  • 4 tsp. of butter
  • 2 Banana shallots finely minced
  • 4 tbsp. Cognac or brandy
  • 1/2 cup Creme fraiche
  • Freshly ground black pepper
  • 2 tbsp. Parsley
  • 2 tbsp. vegetable oil
  • 1 cup sliced button mushrooms

Cooking Instructions:


Remove the fillet steak from the fridge and let it sit at room temperature for 15-30 minutes.

Season the steak well with salt and pepper.

Mix the beef stock Worcestershire sauce, Dijon mustard and set aside.


Using a thick-based frying pan add oil and set over medium-high heat. Pat the steaks dry.

Increase the heat to high and sear the meat for 3 minutes on each side. Continue to cook until it has a good colour all over and probe to 35°C in the middle for medium-rare.

Add half of the butter to the pan and then add the mushrooms. Season with salt and pepper and sauté until golden while your steak is resting.


Sauté the shallots in the pan for 2 minutes on medium-high heat, stirring once or twice.

Add the Cognac to deglaze the pan. Increase the heat and cook until the Cognac is almost evaporated.

Add the broth mixture followed by the cream. Stir and bring to a boil. Cook until thickened, this will take around 2-3 minutes.


Add the steak back to the pan reheat and then add the chopped parsley.

Drizzle warm Diane sauce over the steak and garnish with freshly ground black pepper.
